What Is Specialty Coffee, Actually
Specialty coffee is not a brand. It's a standard.
The Specialty Coffee Association defines it as coffee that scores 80 or above on a 100-point cupping scale, assessed by certified Q-graders. That score covers aroma, flavor, aftertaste, acidity, body, balance, and absence of defects.
In practice, specialty coffee means: traceable origin (you know the farm, the region, often the farmer), small-batch roasting, careful processing, and flavors that reflect where and how the bean was grown - not just "coffee taste."
The Dutch Roasting Scene
The Netherlands has a disproportionately strong specialty coffee culture relative to its size. Amsterdam alone has dozens of serious roasters - many of them working directly with farms, running their own importing relationships, and producing some of the best-roasted coffee in Europe.
Dutch roasters tend toward lighter roast profiles, which preserve more of the bean's natural character - the fruit notes, the florals, the regional specificity. It's a style that rewards good sourcing: you can't hide a mediocre bean under a light roast.

For our Signature line, we taste around 25 different samples before selecting each rotating release. The selection criteria: flavor complexity, origin story, roast quality, and how well the coffee performs in drip brewing specifically.
